How to Quickly Bake Potatoes

Welcome to another edition of “Kimberly’s Corner”. Today, I’m sharing with you a frozen dessert review – just in time for summer!
There are times where you just crave a baked potato, but simply don’t have the time to wait for it to bake in the oven. This is one of the times I like to use the microwave.

Type: Side Dish
Tags: potato, potatoes, baked potatoes, microwave, quick, side dish
Serve With: Sour cream, chives, bacon bits, cheese, butter, salt and pepper, if desired.
Prep Time: 5 min
Cook Time: 6 min for 1 potato, 10-12 min for 2 or more potatoes
Ingredients:
1 large Potato – Or as many as needed
1/2 tbsp Olive Oil – Per potato
sprinkle Sea Salt – Or Kosher Salt
Instructions:
1. Choose your baked potatoes and scrub them under cold water.
2. Pat dry with paper towels.
3. Poke with a fork each potato numerous times (at least 5-6) all over.
* 4. This is Optional – Put about 1/2 tbsp olive oil in your hands and rub over each potato.
5. Put the potato(es) on a microwave safe plate and sprinkle with sea salt, if desired.
6. Some microwaves have a baked potato function where you just enter the number of potatoes you’re cooking. However, if not, one potato will take about 6 minutes to cook through. If you have more than 1 potato, try 10 minutes and keep adding 2 minutes if they’re not cooked through.
* Tip: Use a fork or sharp knife and test the potato to be sure it’s soft throughout.
7. Voila! You have baked potatoes! Serve with butter, sour cream, chives or finely chopped green onions, freshly cracked pepper, cheese, bacon bits or whatever else you like on them!
Baked potatoes are great alongside steaks, seared chicken breasts and even pan fried fish.

I prefer the fluffyness of an oven baked potato but don’t often have 45 minutes to bake them, so I found that 5 minutes in the micro on high, and 15 min. in the oven @ 450 works well.kev.
