Welcome to another edition of “Kimberly’s Corner”. Since we love to cook so many different cuisines from around the world, there are times we get our seasonings crossed – on purpose!
This is called Fusion cuisine, meaning it’s a mixture of 2 or more different cultures. Asian-Indian, Euro-Asian, even our beloved Tex-Mex is a fusion of American and Mexican.
Well, this is a Soul Food dish of dirty rice and black beans combined with an Italian flare. Instead of using bacon, like you would with Cuban style rice and beans, we’re using Salami – an Italian favorite!
Type: Main Dish
Serve With: Fresh, crusty, Italian bread
Prep Time: 15 min (using cooked beans & rice)
Yield: 4-5 servings
Ingredients:
2 cups black beans – Soaked & cooked
2 cups brown rice – Cooked
4-6 slices salami of your choice – Sliced & pan fried
1 medium onion – Chopped

There are times where you just crave a baked potato, but simply don’t have the time to wait for it to bake in the oven. This is one of the times I like to use the microwave.

Tags: potato, potatoes, baked potatoes, microwave, quick, side dish
Serve With: Sour cream, chives, bacon bits, cheese, butter, salt and pepper, if desired.
Prep Time: 5 min
Cook Time: 6 min for 1 potato, 10-12 min for 2 or more potatoes

1 large Potato – Or as many as needed
1/2 tbsp Olive Oil – Per potato

When my husband makes chili, he doesn’t make it like mine. So, it’s a nice change sometimes when he cooks it.
Here’s his recipe he made today:
Type: Main Dish Recipe
Servie With: Sweet Southern Cornbread
Prep Time: 2 1/2 hrs. with beans from scratch – Otherwise, 30 min
Yield: ~ 4-6 servings
1. Take 1 bag of beans, of your choice – we often use kidney beans, red beans, pinto beans, black beans, whatever type you like – rinse them under cold water in a strainer.
2. In a large stock pot, boil beans in 3/4 pot water – it will take 1-2 hours for smaller beans to cook through and sometimes 3 hours for kidney beans. Only add bay leaf, pepper, chili flakes, garlic or onions.
* Tip: DO NOT add any salt or acidic seasoning or flavoring (lemon, lime, vinegar, hot sauce) when cooking beans. It will increase your cooking time dramatically, and they never really get quite as tender as you’d like them to be.

I am a marinating queen! I love flavor!
When I have a marinating steak, I love to experiment with flavors, but often falling back on my “trusty rusty” recipe I’ve used for ages.
* Tip: When marinating, you don’t need to be precise with your measurements. Just be sure you have enough marinade in the container to completely coat the meat.
Have a large Ziploc-type bag ready. Rinse steaks under cold water and place in bag.

I love tofu! In fact, I try to include it in many of my dishes because it is a lean protein and takes on the flavor of whatever you cook it with. However, in this appetizer, it’s the main event!

Let’s Face It: Soda isn’t the best thing for you – it slows down your metabolism, and if you’re drinking anything like a Coke or 7-Up (soda pop you get from the store that’s flavored and sweetened), you have up to 16 tsp of sugar in 1 can!
I’ll bet you didn’t know that…Imagine serving yourself up 16 tsp of sugar in a glass of liquid. Yuk!!!
That’s right people – Do you know how many calories that is? There is 16 calories in 1 tsp of sugar – That means there is at least 256 calories in your beloved caffeinated soda.
So, you try to drink diet pop, but those additives are bad for you and could cause cancer!
So, make your own unsweetened or slightly, naturally sweetened version without preservatives and artificial colors yourself!

Type: Beverage
Serve With: Ice, if desired

Yield: 1 glass
Nutrition Facts: This is a fraction of the calories you’d get from a store-bought soda pop. Ginger has numerous health benefits, as you’ll read after the recipe below, and ginger is known to help settle your stomach.
Ingredients:
1 glass Soda Water, Tonic Water or Mineral Water – Use a flavorless, plain, carbonated water.
